About Us
At Holly Oaks Farm our mission is to produce high quality Dexter Irish Beef Cattle for the North Carolina community "Farm to Table" and continue to grow our Dexter Cattle seed stock program. Holly Oaks Farm Started as a Angus Producer in 2007.
Holly Oaks Farm Vision is to be a major supplier of Dexter beef, and Angus beef supplier utilizing the local Farmers Market in NC. All our cattle are grass based, and processed in NC, under USDA inspection to ensure healthy quality beef. We also age our beef for superior taste and tenderness.

Dexter Beef
Irish Dexter beef has outstanding quality and flavor, with good marbling and this has helped a resurgence of the breed which was once endangered.
The smallest Irish cattle breed, in fact about half the size of modern commercial cattle, Dexter beef is now popular with consumers because of the excellent eating quality of small, trim cuts.
Being so lean means that the meat from Dexter cattle is lower in saturated fat and a good, healthier choice for those who are watching their weight and/or cholesterol levels. The meat from Dexter beef is also high in protein and iron, which are essential nutrients for our bodies.
